For this Sheet Pan Chicken Pitas with Herby Ranch, you will need the following ingredients:

  • 1 pound boneless, skinless chicken breasts
  • 2 cups bell peppers (mixed colors), sliced
  • 1 cup red onion, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon dried oregano
  • Salt and pepper, to taste
  • 4 whole wheat pita breads
  • 1 cup Greek yogurt
  • 2 tablespoons fresh dill, chopped
  • 1 tablespoon fresh parsley, chopped
  • Juice of 1 lemon

Instructions

  1. Preheat your oven to 425°F (220°C).
  2. Slice chicken and veggies, then toss with olive oil and seasonings.
  3. Spread on a sheet pan and roast for about 25 minutes.
  4. While roasting, mix Greek yogurt, dill, parsley, and lemon juice for the dressing.
  5. Assemble pitas with roasted chicken, veggies, and dressing.
