For this Sheet Pan Chicken Pitas with Herby Ranch, you will need the following ingredients:
- 1 pound boneless, skinless chicken breasts
- 2 cups bell peppers (mixed colors), sliced
- 1 cup red onion, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon dried oregano
- Salt and pepper, to taste
- 4 whole wheat pita breads
- 1 cup Greek yogurt
- 2 tablespoons fresh dill, chopped
- 1 tablespoon fresh parsley, chopped
- Juice of 1 lemon
Instructions
- Preheat your oven to 425°F (220°C).
- Slice chicken and veggies, then toss with olive oil and seasonings.
- Spread on a sheet pan and roast for about 25 minutes.
- While roasting, mix Greek yogurt, dill, parsley, and lemon juice for the dressing.
- Assemble pitas with roasted chicken, veggies, and dressing.
- Serve and enjoy!
