Ingredients

  • For the Shrimp:
    • 1/2 lb shrimp, peeled and deveined
    • 1 tablespoon olive oil
    • 2 cloves garlic, minced
    • Salt and pepper to taste
    • 1/4 teaspoon red pepper flakes (optional for heat)
  • For the Garlic Bread:
    • 8 slices of thick bread (sourdough or French bread works well)
    • 1/4 cup unsalted butter, softened
    • 3 cloves garlic, minced
    • 2 tablespoons fresh parsley, chopped
    • 1/2 teaspoon garlic powder
  • For the Grilled Cheese:
    • 2 cups shredded mozzarella cheese (or a mix of mozzarella and cheddar)
    • 1/4 cup grated Parmesan cheese
    • Olive oil or butter for grilling

Instructions

    1. Cook the Shrimp:
      • In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
      • Add the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.
    2. Prepare the Garlic Bread:
      • In a small bowl, combine the softened butter, minced garlic, chopped parsley, and garlic powder.
      • Spread the garlic butter mixture evenly on one side of each bread slice.
    3. Assemble the Grilled Cheese:
      • Heat a skillet or griddle over medium heat. Place 4 slices of bread, garlic butter side down, on the skillet.
      • Sprinkle a generous amount of shredded mozzarella cheese and Parmesan cheese on each slice of bread.
      • Top the cheese with a few cooked shrimp.
      • Place the remaining 4 slices of bread, garlic butter side up, on top of the shrimp.
    4. Grill the Sandwiches:
      • Cook each sandwich for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted and gooey.
    5. Serve:
      • Remove the sandwiches from the skillet and slice in half. Serve warm, paired with a side salad or soup for a complete meal.
