- 1/2 lb shrimp, peeled and deveined
- 1 tablespoon olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste

- For the Garlic Bread:
- 8 slices of thick bread (sourdough or French bread works well)
- 1/4 cup unsalted butter, softened
- 3 cloves garlic, minced
- 2 tablespoons fresh parsley, chopped
- 1/2 teaspoon garlic powder
- For the Grilled Cheese:
- 2 cups shredded mozzarella cheese (or a mix of mozzarella and cheddar)
- 1/4 cup grated Parmesan cheese
- Olive oil or butter for grilling

- Cook the Shrimp:
- In a skillet, heat the olive oil over medium heat. Add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the shrimp, season with salt, pepper, and red pepper flakes (if using), and cook for 2-3 minutes on each side until pink and opaque. Remove from heat and set aside.
- Prepare the Garlic Bread:
- In a small bowl, combine the softened butter, minced garlic, chopped parsley, and garlic powder.
- Spread the garlic butter mixture evenly on one side of each bread slice.
- Assemble the Grilled Cheese:
- Heat a skillet or griddle over medium heat. Place 4 slices of bread, garlic butter side down, on the skillet.
- Sprinkle a generous amount of shredded mozzarella cheese and Parmesan cheese on each slice of bread.
- Top the cheese with a few cooked shrimp.
- Place the remaining 4 slices of bread, garlic butter side up, on top of the shrimp.
- Grill the Sandwiches:
- Cook each sandwich for 3-4 minutes on each side, or until the bread is golden brown and crispy, and the cheese is melted and gooey.
- Serve:
- Remove the sandwiches from the skillet and slice in half. Serve warm, paired with a side salad or soup for a complete meal.
