Ingredients

- 1 pound of shrimp, peeled and deveined
- 1 pound of crab meat (or imitation crab)
- 2 cups of mixed greens (like spinach and arugula)
- 1 cup of cherry tomatoes, halved
- 1/2 cup of diced cucumber
- 1/4 cup of red onion, finely chopped
- 1 avocado, diced
- 1/4 cup of fresh cilantro, chopped
- Juice of 2 limes
- Salt and pepper to taste
Instructions
- Boil water with a pinch of salt, add shrimp, and cook until pink (3-5 minutes). Drain and cool.
- Wash and chop the mixed greens, tomatoes, cucumber, onion, and avocado.
- In a large bowl, combine shrimp, crab meat, and chopped vegetables. Toss gently.
- Drizzle lime juice over the mixture, add salt, pepper, and cilantro, then toss again.
- Serve on a platter or in bowls, and chill if desired before enjoying.
Notes
- Feel free to add other vegetables or herbs as desired.
- This salad can be prepared a few hours in advance for better flavor.
