A refreshing seafood salad packed with shrimp, crab, and fresh vegetables, perfect for any occasion.

Ingredients

  • 1 pound of shrimp, peeled and deveined
  • 1 pound of crab meat (or imitation crab)
  • 2 cups of mixed greens (like spinach and arugula)
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of diced cucumber
  • 1/4 cup of red onion, finely chopped
  • 1 avocado, diced
  • 1/4 cup of fresh cilantro, chopped
  • Juice of 2 limes
  • Salt and pepper to taste

Instructions

  1. Boil water with a pinch of salt, add shrimp, and cook until pink (3-5 minutes). Drain and cool.
  2. Wash and chop the mixed greens, tomatoes, cucumber, onion, and avocado.
  3. In a large bowl, combine shrimp, crab meat, and chopped vegetables. Toss gently.
  4. Drizzle lime juice over the mixture, add salt, pepper, and cilantro, then toss again.
  5. Serve on a platter or in bowls, and chill if desired before enjoying.

Notes

  • Feel free to add other vegetables or herbs as desired.
