  • 1/2 teaspoon salt
  • 1 cup milk
  • 1 large egg
  • 2 tablespoons melted butter
  • 1 cup cooked and crumbled sausage or bacon
  • 1/2 cup shredded cheese (cheddar or your choice)
  • 1/2 cup diced bell peppers
  • 1/4 cup chopped green onions
  • Sour cream or salsa for serving (optional)

Instructions

  1. Combine flour, baking powder, and salt in a large bowl.
  2. In another bowl, whisk together milk, egg, and melted butter.
  3. Pour the wet mixture into the dry mixture and stir until just combined.
  4. Heat a non-stick skillet and pour 1/4 cup of batter for each pancake; cook until bubbles form, then flip and cook until golden brown.
  5. Assemble tacos by placing a pancake on a plate and filling it with sausage, cheese, bell peppers, and green onions. Fold and serve with sour cream or salsa.
