- 1/2 cup diced bell peppers
- 1/4 cup chopped green onions
- Sour cream or salsa for serving (optional)
Instructions
- Combine flour, baking powder, and salt in a large bowl.
- In another bowl, whisk together milk, egg, and melted butter.
- Pour the wet mixture into the dry mixture and stir until just combined.
- Heat a non-stick skillet and pour 1/4 cup of batter for each pancake; cook until bubbles form, then flip and cook until golden brown.
- Assemble tacos by placing a pancake on a plate and filling it with sausage, cheese, bell peppers, and green onions. Fold and serve with sour cream or salsa.
Notes
- Do not overmix the batter to keep pancakes fluffy.
- Adjust cooking time based on skillet heat for best results.
