  • 2 cups of pancake mix
  • 1 cup of milk
  • 2 large eggs
  • 1 teaspoon of baking powder

  • 1/4 cup of maple syrup (for drizzling)

Instructions

  1. Cook the sausage in a skillet over medium heat until browned and crumbly, about 5-7 minutes. Drain excess grease.
  2. In a large bowl, mix pancake mix, milk, eggs, and baking powder until just combined.
  3. Fold in the cooked sausage and shredded cheese if using.
  4. Preheat the oven to 375°F (190°C) and prepare a muffin tin with cooking spray or liners.
  5. Fill each muffin cup about two-thirds full with batter.
  6. Bake for 15-20 minutes until a toothpick comes out clean.
  7. Cool in the tin for a few minutes, then transfer to a wire rack and drizzle with maple syrup.
