- 1 pound of breakfast sausage
- 2 cups of pancake mix
- 1 cup of milk
- 2 large eggs
- 1 teaspoon of baking powder
- 1/2 cup of shredded cheese (optional)
- 1/4 cup of maple syrup (for drizzling)
Instructions
- Cook the sausage in a skillet over medium heat until browned and crumbly, about 5-7 minutes. Drain excess grease.
- In a large bowl, mix pancake mix, milk, eggs, and baking powder until just combined.
- Fold in the cooked sausage and shredded cheese if using.
- Preheat the oven to 375°F (190°C) and prepare a muffin tin with cooking spray or liners.
- Fill each muffin cup about two-thirds full with batter.
- Bake for 15-20 minutes until a toothpick comes out clean.
- Cool in the tin for a few minutes, then transfer to a wire rack and drizzle with maple syrup.

- For added flavor, consider using flavored sausage.
