To make this delicious Sausage and Sweet Potato Breakfast Hash, you will need the following ingredients:
- 1 lb breakfast sausage (you can use turkey or pork)
- 2 medium sweet potatoes, peeled and diced
- 1 bell pepper, diced (red or green for color)
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 tsp paprika
- Salt and pepper, to taste
- 2 tbsp olive oil
- Fresh parsley, chopped for garnish
- Optional: eggs for topping
Instructions
- Cook sausage in a skillet with olive oil until browned, about 5-7 minutes.
- Add diced onions and bell peppers; sauté for 3-4 minutes.
- Stir in sweet potatoes, garlic, paprika, salt, and pepper, then drizzle with remaining olive oil.
- Cover and cook for about 15 minutes, stirring occasionally until sweet potatoes are tender.
- If desired, create wells for eggs, crack them in, cover, and cook for an additional 5 minutes.
- Garnish with parsley and serve hot.
