- 1 pound of Italian sausage (sweet or spicy, your choice!)
- 1 cup of long-grain rice
- 2 cups of chicken broth
- 1 bell pepper, diced (red or green)
- 1 onion, chopped
- 2 cloves of garlic, minced
- 1 can (14.5 oz) diced tomatoes (with juice)
- 1 teaspoon of Italian seasoning
- Salt and pepper to taste
- Fresh parsley, chopped (for garnish)
Instructions
- Brown the Italian sausage in a skillet over medium heat for 5-7 minutes.
- Add chopped onion, bell pepper, and garlic; sauté for 3-4 minutes.
- Stir in rice, diced tomatoes, chicken broth, Italian seasoning, salt, and pepper; bring to a boil.
- Reduce heat, cover, and simmer for 20 minutes.
- Remove from heat, let sit covered for 5 minutes, fluff with a fork, and garnish with parsley.
