    • ¼ cup granulated sugar
  • For the cheesecake filling:
    • 3 (8 oz) packages cream cheese, softened
    • 1 cup granulated sugar
    • 1 teaspoon vanilla extract
    • 3 large eggs
    • 1 cup sour cream
    • ½ teaspoon ground cinnamon

    • 3 cups sliced apples (about 34 medium apples)
    • ½ cup brown sugar
    • 1 teaspoon vanilla extract
    • 1 teaspoon ground cinnamon
    • 1 tablespoon lemon juice
  • For the salted caramel:
    • 1 cup granulated sugar
    • 6 tablespoons unsalted butter, cut into pieces
    • ½ cup heavy cream
    • 1 teaspoon sea salt

Instructions

  1. Prepare the crust by combining graham cracker crumbs, melted butter, and sugar, then press into a springform pan and bake at 350°F for 10 minutes.
  2. Make the cheesecake filling by beating cream cheese, adding sugar, vanilla, eggs, sour cream, and cinnamon until smooth.
  3. Prepare the apple pie filling by mixing sliced apples with brown sugar, vanilla, cinnamon, and lemon juice.
  4. Assemble the cheesecake by layering half of the cheesecake filling, half of the apple filling, the remaining cheesecake filling, and the rest of the apples.
  5. Bake for 1 hour until edges are set, then cool in the oven for 1 hour.
  6. Make the salted caramel by melting sugar until amber, stirring in butter, then whisking in heavy cream and sea salt.
  7. Once cooled, drizzle the cheesecake with salted caramel and refrigerate for 4 hours or overnight.

Notes

  • For best flavor, refrigerate overnight before serving.
