A delicious and healthy baked salmon dish stuffed with spinach and parmesan.

Ingredients

  • 4 salmon fillets (6 oz each)
  • 1 cup fresh spinach, chopped
  • ½ cup grated parmesan cheese
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • 1 teaspoon lemon juice
  • Salt and pepper to taste
  • 1 teaspoon dried oregano
  • ½ teaspoon red pepper flakes (optional)

Instructions

  1. Heat olive oil in a skillet and sauté minced garlic until fragrant.
  2. Add spinach and cook until wilted, then mix in parmesan, lemon juice, oregano, salt, and pepper.
  3. Preheat oven to 375°F (190°C) and prepare salmon fillets by cutting pockets and stuffing with the filling.
  4. Place stuffed fillets on a lined baking sheet, season, and bake for 20-25 minutes until cooked through.
