- 1 cup quinoa, rinsed
- 2 medium sweet potatoes, peeled and diced

Instructions
- Preheat oven to 400°F (200°C) and roast sweet potatoes with olive oil and spices for 25 minutes.
- Cook quinoa in a saucepan with water for 15 minutes, then fluff.
- Combine quinoa, black beans, corn, and red bell pepper in a bowl, then fold in sweet potatoes and avocado.
- Drizzle lime juice over the salad, toss gently, and season with salt, pepper, and cilantro if desired.
