Ingredients

  • 2 turkey fillets (about 1 pound each)
  • 1 orange, zested and juiced
  • 1 lemon, zested and juiced
  • 3 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 tablespoon fresh rosemary, chopped
  • 1 tablespoon fresh thyme, chopped
  • Salt and pepper to taste

Instructions

  1. Combine orange zest, lemon zest, olive oil, garlic, rosemary, thyme, salt, and pepper in a bowl to make the marinade.
  2. Marinate turkey fillets in a resealable bag or dish for at least 30 minutes.
  3. Preheat oven to 375°F (190°C).
  4. Transfer turkey to a baking dish, pour remaining marinade over, and roast for 25-30 minutes until internal temperature reaches 165°F (74°C).
  5. Let the turkey rest for 5-10 minutes before slicing.
  6. Slice and serve, drizzled with pan juices.
