To make these Roasted Carrots with Candied Pecans, you’ll need the following ingredients:
- 1 pound of fresh carrots, peeled and cut into sticks
- 2 tablespoons olive oil
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1/4 cup pecans, chopped
- 2 tablespoons brown sugar
- 1 tablespoon butter
- 1/2 teaspoon cinnamon (optional)
Instructions
- Preheat oven to 425°F (220°C).
- Toss carrot sticks with olive oil, salt, and black pepper in a bowl.
- Spread carrots on a baking sheet and roast for 20-25 minutes, stirring halfway.
- Melt butter in a skillet, add pecans, brown sugar, and cinnamon, and stir until coated.
