- 1 pound shrimp, peeled and deveined

- 1 cup heavy cream
- 1 cup shredded sharp cheddar cheese

Instructions
- Bring water or chicken broth to a boil in a saucepan.
- Slowly stir in grits, reduce heat, and simmer for 20-25 minutes, stirring occasionally.
- Stir in butter and cheese, and season with salt and pepper once grits are creamy.
- In a skillet, heat olive oil and sauté onion until translucent, then add garlic.
- Add shrimp and Cajun seasoning, cooking until shrimp are pink and opaque.
- Pour in heavy cream and simmer briefly, then combine with the grits.
- Serve hot, garnished with chopped green onions.
