Ingredients

  • 1 cup grits (preferably stone-ground)
  • 4 cups water or chicken broth
  • 1 pound shrimp, peeled and deveined
  • 4 tablespoons butter
  • 1 cup heavy cream
  • 1 cup shredded sharp cheddar cheese
  • 1 tablespoon olive oil
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Bring water or chicken broth to a boil in a saucepan.
  2. Slowly stir in grits, reduce heat, and simmer for 20-25 minutes, stirring occasionally.
  3. Stir in butter and cheese, and season with salt and pepper once grits are creamy.
  4. In a skillet, heat olive oil and sauté onion until translucent, then add garlic.
  5. Add shrimp and Cajun seasoning, cooking until shrimp are pink and opaque.
  6. Pour in heavy cream and simmer briefly, then combine with the grits.
  7. Serve hot, garnished with chopped green onions.
