Ingredients

  • 4 red snapper fillets (about 6 ounces each)
  • 1 cup crawfish tails, cooked
  • 1 cup heavy cream
  • 2 tablespoons butter
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • 1 small onion, finely chopped
  • 1 teaspoon Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Season the red snapper fillets with salt, pepper, and Cajun seasoning.
  2. Heat olive oil in a skillet and sear the fillets for 4-5 minutes on each side until golden brown. Remove and set aside.
  3. In the same skillet, add butter, onions, and garlic; sauté until onions are translucent.
  4. Stir in crawfish tails and cook for 2 minutes.
  5. Pour in heavy cream, simmer for 5 minutes until thickened.
  6. Return the snapper to the skillet, spoon sauce over, and simmer for another 2 minutes before serving.
