- 1 teaspoon hot sauce (optional for extra heat)

Instructions
- Prepare the Grits:
- In a large pot, bring the water (or chicken broth) to a boil. Slowly whisk in the grits and reduce the heat to low.

- Stir in the butter, heavy cream, shredded cheddar cheese, salt, and pepper. Keep warm.
- Season and Cook the Red Snapper & Shrimp:
- Season the red snapper fillets and shrimp with Cajun seasoning, salt, and pepper.
- In a large skillet, heat the olive oil over medium-high heat.
- Add the red snapper fillets, skin-side down if they have skin, and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove from the skillet and set aside.
- In the same skillet, add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
- Make the Cajun Cream Sauce:
- In the same skillet, melt the butter over medium heat.
- Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
- Stir in the Cajun seasoning, heavy cream, and chicken broth. Let the sauce simmer for 5 minutes, stirring occasionally, until it thickens slightly.
- Stir in the Parmesan cheese and hot sauce (if using). Season with salt and pepper to taste.
- Serve:
- Spoon the creamy grits onto plates, then top with the red snapper and shrimp.
