    • 4 cups water or chicken broth

    • 1/2 cup shredded cheddar cheese
    • 2 tablespoons butter

  • For the Cajun Cream Sauce:
    • 2 tablespoons unsalted butter
    • 1 small onion, finely chopped
    • 2 cloves garlic, minced
    • 1 tablespoon Cajun seasoning
    • 1 cup heavy cream
    • 1/2 cup chicken broth
    • 1/4 cup grated Parmesan cheese
    • 1 teaspoon hot sauce (optional for extra heat)
    • Salt and pepper to taste
    • Fresh parsley, chopped for garnish

Instructions

  1. Prepare the Grits:
    • In a large pot, bring the water (or chicken broth) to a boil. Slowly whisk in the grits and reduce the heat to low.
    • Simmer the grits, stirring occasionally, for 20-25 minutes until thick and creamy.
    • Stir in the butter, heavy cream, shredded cheddar cheese, salt, and pepper. Keep warm.
  2. Season and Cook the Red Snapper & Shrimp:
    • Season the red snapper fillets and shrimp with Cajun seasoning, salt, and pepper.
    • In a large skillet, heat the olive oil over medium-high heat.
    • Add the red snapper fillets, skin-side down if they have skin, and cook for 3-4 minutes on each side, or until the fish is golden brown and flakes easily with a fork. Remove from the skillet and set aside.
    • In the same skillet, add the shrimp and cook for 2-3 minutes on each side until pink and opaque. Remove from the skillet and set aside.
  3. Make the Cajun Cream Sauce:
    • In the same skillet, melt the butter over medium heat.
    • Add the chopped onion and cook for 3-4 minutes until softened. Add the minced garlic and cook for another minute until fragrant.
    • Stir in the Cajun seasoning, heavy cream, and chicken broth. Let the sauce simmer for 5 minutes, stirring occasionally, until it thickens slightly.
    • Stir in the Parmesan cheese and hot sauce (if using). Season with salt and pepper to taste.
  4. Serve:
    • Spoon the creamy grits onto plates, then top with the red snapper and shrimp.
    • Drizzle the Cajun cream sauce over the fish and shrimp, and garnish with fresh parsley.
