This Raspberry Swirl Brioche Loaf is a delightful combination of fluffy brioche and tangy raspberry filling.

Ingredients

  • 4 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1 teaspoon salt
  • 1/2 cup whole milk, warmed
  • 3 large eggs
  • 1/2 cup unsalted butter, softened
  • 1 cup fresh raspberries (or raspberry jam)
  • 1 tablespoon lemon juice

Instructions

  1. Combine flour, sugar, yeast, and salt in a bowl; add warmed milk and eggs.
  2. Knead the dough on a floured surface for about 10 minutes.
  3. Incorporate softened butter into the dough until absorbed.
  4. Place dough in a greased bowl, cover, and let rise for 1 to 1.5 hours.
  5. Prepare raspberry filling by mashing raspberries with lemon juice.
  6. Punch down the risen dough, roll it out, and spread raspberry filling.
  7. Roll the dough into a log and place in a greased pan.
  8. Let rise for another 30-45 minutes while preheating oven to 350°F (175°C).
  9. Bake for 30-35 minutes until golden brown.
  10. Cool in the pan for 10 minutes before transferring to a wire rack.

Notes
