- 2 pounds of baby potatoes
- 3 tablespoons of olive oil
- 1 tablespoon of Cajun seasoning
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- Wash the baby potatoes and cut larger ones in half.
- Mix olive oil, Cajun seasoning, garlic powder, onion powder, salt, and pepper in a bowl. Toss the potatoes until coated.
- Spread the potatoes in a single layer on a baking sheet.
- Bake for about 25 minutes, stirring halfway through, until fork-tender and golden.
- Garnish with fresh parsley and serve warm.

- For extra crispiness, broil for the last 2-3 minutes.
