Ingredients

  • 3 tablespoons of olive oil
  • 1 tablespoon of Cajun seasoning
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. Wash the baby potatoes and cut larger ones in half.
  3. Mix olive oil, Cajun seasoning, garlic powder, onion powder, salt, and pepper in a bowl. Toss the potatoes until coated.
  4. Spread the potatoes in a single layer on a baking sheet.
  5. Bake for about 25 minutes, stirring halfway through, until fork-tender and golden.
  6. Garnish with fresh parsley and serve warm.
