Delicious and healthy pumpkin cookies made with simple ingredients.

Ingredients

  • 1/2 cup of peanut butter or almond butter
  • 1/4 cup of honey or maple syrup
  • 2 cups of rolled oats
  • 1 tablespoon of pumpkin pie spice
  • 1 teaspoon of vanilla extract
  • A pinch of salt

Instructions

  1. In a large mixing bowl, combine pumpkin puree, peanut butter, honey, vanilla extract, and salt. Stir until smooth.
  2. Add rolled oats and pumpkin pie spice; mix until well combined.
  3. Scoop and shape the mixture into small balls or flatten into cookies on a parchment-lined baking sheet.
  4. Refrigerate the cookies for at least 30 minutes to set.
