- 1 teaspoon of vanilla extract
- A pinch of salt
Instructions
- In a large mixing bowl, combine pumpkin puree, peanut butter, honey, vanilla extract, and salt. Stir until smooth.
- Add rolled oats and pumpkin pie spice; mix until well combined.
- Scoop and shape the mixture into small balls or flatten into cookies on a parchment-lined baking sheet.
- Refrigerate the cookies for at least 30 minutes to set.
Notes
- Substitute almond butter for peanut butter if desired.
- Store leftovers in an airtight container in the refrigerator.
