- 1 pound of pumpkin gnocchi
- 2 cups of ricotta cheese
- 1 cup of shredded mozzarella cheese
- 1/2 cup of grated Parmesan cheese
- 1 cup of spinach (fresh or frozen)
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- 1/2 teaspoon of nutmeg
- Salt and pepper to taste
- 1 tablespoon of olive oil
Instructions
- Preheat oven to 375°F (190°C).
- Cook pumpkin gnocchi as per package instructions, then drain.
- In a bowl, mix ricotta, mozzarella, Parmesan, garlic powder, onion powder, nutmeg, salt, and pepper.
- Add chopped fresh spinach or thawed, drained frozen spinach to the cheese mixture.
- Gently fold cooked gnocchi into the cheese and spinach mixture.
- Transfer to a greased baking dish, drizzle with olive oil, and bake for 25-30 minutes until golden and bubbly.
