A delicious baked pumpkin gnocchi dish with a creamy cheese and spinach filling.

Ingredients

  • 1 pound of pumpkin gnocchi
  • 2 cups of ricotta cheese
  • 1 cup of shredded mozzarella cheese
  • 1/2 cup of grated Parmesan cheese
  • 1 cup of spinach (fresh or frozen)
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • 1/2 teaspoon of nutmeg
  • Salt and pepper to taste
  • 1 tablespoon of olive oil

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook pumpkin gnocchi as per package instructions, then drain.
  3. In a bowl, mix ricotta, mozzarella, Parmesan, garlic powder, onion powder, nutmeg, salt, and pepper.
  4. Add chopped fresh spinach or thawed, drained frozen spinach to the cheese mixture.
  5. Gently fold cooked gnocchi into the cheese and spinach mixture.
  6. Transfer to a greased baking dish, drizzle with olive oil, and bake for 25-30 minutes until golden and bubbly.
