- 1 cup pure pumpkin puree

- 1 cup brown sugar

- 1 teaspoon vanilla extract

- 1 teaspoon baking powder
- 2 teaspoons ground cinnamon

- Optional: 1/2 cup chocolate chips or nuts
Instructions
- Preheat the oven to 350°F (175°C).
- Cream butter, brown sugar, and granulated sugar in a large bowl. Add pumpkin puree, egg, and vanilla; mix well.
- In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
- Gradually add dry ingredients to the wet mixture and stir until just combined. Add optional chocolate chips or nuts if desired.
- Drop rounded balls of dough onto a baking sheet and bake for 12-15 minutes until golden.
- Cool on the baking sheet for a few minutes, then transfer to a wire rack.

- For added flavor, consider using fresh spices instead of pre-ground.
