Delicious pumpkin cookies that are soft, spiced, and perfect for fall.

Ingredients

  • 1 cup pure pumpkin puree
  • 1/2 cup unsalted butter, softened
  • 1 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • Optional: 1/2 cup chocolate chips or nuts

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. Cream butter, brown sugar, and granulated sugar in a large bowl. Add pumpkin puree, egg, and vanilla; mix well.
  3. In another bowl, whisk together flour, baking soda, baking powder, cinnamon, nutmeg, and salt.
  4. Gradually add dry ingredients to the wet mixture and stir until just combined. Add optional chocolate chips or nuts if desired.
  5. Drop rounded balls of dough onto a baking sheet and bake for 12-15 minutes until golden.
  6. Cool on the baking sheet for a few minutes, then transfer to a wire rack.
