- 2 large potatoes, peeled and grated

- 1 cup of shredded cheese (cheddar works wonders!)
- 1/2 cup all-purpose flour
- 2 large eggs
- Salt and pepper to taste
- 1 teaspoon garlic powder (optional)
- Oil for frying
Instructions
- Peel and grate the potatoes, then squeeze out excess moisture.
- Combine grated potatoes, onion, cheese, flour, eggs, salt, pepper, and garlic powder in a bowl and mix well.
- Heat oil in a frying pan over medium heat.
- Form small patties from the mixture and cook in the hot oil for 3-4 minutes on each side until golden brown.
- Transfer cooked pancakes to a paper towel and serve warm.
