Ingredients

  • 1 cup of shredded cheese (cheddar works wonders!)
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • Salt and pepper to taste
  • 1 teaspoon garlic powder (optional)
  • Oil for frying

Instructions

  1. Peel and grate the potatoes, then squeeze out excess moisture.
  2. Combine grated potatoes, onion, cheese, flour, eggs, salt, pepper, and garlic powder in a bowl and mix well.
  3. Heat oil in a frying pan over medium heat.
  4. Form small patties from the mixture and cook in the hot oil for 3-4 minutes on each side until golden brown.
  5. Transfer cooked pancakes to a paper towel and serve warm.
