- 1 ripe pineapple, peeled and diced
- 2 medium cucumbers, diced
- 1 red bell pepper, chopped
- 1/4 red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- Salt and pepper to taste
Instructions
- Wash all produce, then peel and dice the pineapple and cucumbers.
- Chop the red bell pepper, red onion, and finely chop cilantro.
- In a large bowl, combine pineapple, cucumbers, bell pepper, onion, and cilantro.
- Squeeze lime juice over the salad and season with salt and pepper; mix gently.
- Chill in the refrigerator for at least 30 minutes before serving.

- Adjust seasoning to taste.
- Best served cold after chilling.
