Ingredients

  • 1 ripe pineapple, peeled and diced
  • 2 medium cucumbers, diced
  • 1 red bell pepper, chopped
  • 1/4 red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 1 lime
  • Salt and pepper to taste

Instructions

  1. Wash all produce, then peel and dice the pineapple and cucumbers.
  2. Chop the red bell pepper, red onion, and finely chop cilantro.
  3. In a large bowl, combine pineapple, cucumbers, bell pepper, onion, and cilantro.
  4. Squeeze lime juice over the salad and season with salt and pepper; mix gently.
  5. Chill in the refrigerator for at least 30 minutes before serving.
