Before we get started, here’s what you’ll need:
- 4 large bell peppers (any color)
- 2 cups cooked chicken, shredded
- 1 cup pineapple chunks (fresh or canned)
- 1 cup BBQ sauce (your favorite brand)
- 1 cup shredded cheese (cheddar or mozzarella)
- 1 tablespoon olive oil
- 1 teaspoon garlic powder
- Salt and pepper to taste
- Fresh cilantro or green onions for garnish (optional)
Instructions
- Preheat the oven to 375°F (190°C), cut the tops off the bell peppers, and remove the seeds.
- In a bowl, mix shredded chicken, pineapple, BBQ sauce, garlic powder, salt, and pepper until combined.
- Drizzle olive oil in a baking dish, stuff the peppers with the chicken mixture, and top with shredded cheese.
- Cover with foil and bake for 25 minutes, then uncover and bake for an additional 5-10 minutes until cheese is golden.

- Feel free to use any color of bell peppers.
- Garnish with cilantro or green onions for extra flavor.
