- 4 to 5 ripe peaches, peeled and sliced
- 1 cup granulated sugar
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 pre-made pie crust (store-bought or homemade)
- 2 cups heavy cream
- 1/4 cup powdered sugar
- 1 teaspoon almond extract (optional)
Instructions
- Peel and slice the peaches, then toss them with sugar, lemon juice, and vanilla. Let sit for 10 minutes.
- Prepare the pie crust by pre-baking if store-bought, or roll out and fit into a pie dish if homemade.
- Pour the peach mixture into the prepared pie crust and spread evenly.
- Whip the heavy cream with powdered sugar until soft peaks form, adding almond extract if desired, then spread over the peaches.
- Preheat oven to 350°F (175°C) and bake for 25-30 minutes. Cool for 15 minutes before refrigerating for at least 2 hours.
