Delicious Peach Pie Crumble Bars with a buttery crust and sweet peach filling.

Ingredients

  • 2 cups of fresh peaches, peeled and diced
  • 1 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 2 cups all-purpose flour
  • 1 cup rolled oats
  • 1/2 cup brown sugar
  • 1 cup unsalted butter, melted
  • 1/2 teaspoon salt

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a bowl, mix peaches, sugar, lemon juice, and vanilla; let sit for 10 minutes.
  3. In another bowl, combine flour, oats, brown sugar, cinnamon, and salt; add melted butter and mix until crumbly.
  4. Press half the crumble mixture into a greased 9×13 inch baking dish, add peach mixture, and top with remaining crumble.
  5. Bake for 40-45 minutes until golden brown and bubbly.
  6. Cool completely, then cut into squares and serve.

Notes

  • For best flavor, use ripe peaches.
  • Serve with ice cream for a delicious dessert.
