Ingredients

- 2 ripe peaches, pitted and chopped
- 2 tablespoons honey
- 1 tablespoon Dijon mustard
- 1/4 cup extra virgin olive oil
- 1 tablespoon apple cider vinegar
- Salt and pepper, to taste
Instructions
- Wash and chop the peaches, then set aside.
- Blend the peaches until smooth.
- Add honey and Dijon mustard, then blend again.
- Slowly drizzle in olive oil while blending to emulsify.
- Add apple cider vinegar and blend to combine.
- Season with salt and pepper, adjust to taste, then transfer to a container.
Notes
- For a sweeter vinaigrette, use riper peaches.
- Store in the refrigerator and use within a week.
