- 1 cup grated zucchini
- 1 cup grated potatoes
- 1 cup all-purpose flour
- 1/2 cup grated Parmesan cheese
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- 2 large eggs
- 1/4 cup milk
- 1/4 cup olive oil
- 1 teaspoon garlic powder
- 1/2 teaspoon black pepper
Instructions
- Preheat the oven to 375°F (190°C).
- Grease a muffin tin or line it with muffin liners.
- In a bowl, mix flour, baking powder, baking soda, salt, garlic powder, and black pepper.
- In another bowl, beat eggs and mix in milk and olive oil.
- Fold wet ingredients into dry ingredients, then add zucchini, potatoes, and Parmesan cheese.
- Fill each muffin cup 2/3 full with batter.
- Bake for 20-25 minutes until a toothpick comes out clean.
- Cool in the tin for 5 minutes before transferring to a wire rack.
