Ingredients

  • 2 pounds baby potatoes (Yukon Gold or red potatoes work well)
  • 1/4 cup olive oil
  • 1 cup grated Parmesan cheese
  • 4 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)
  • Optional: paprika or Italian seasoning for extra flavor

Instructions

  1. Boil washed baby potatoes in salted water until fork-tender (15-20 minutes).
  2. Preheat the oven to 450°F (230°C).
  3. Drain potatoes, cool slightly, and smash them on a lined baking sheet.
