Ingredients

  • 8 oz. fettuccine or linguine pasta
  • 1 lb. shrimp, peeled and deveined
  • 1 cup andouille sausage, sliced
  • 2 cups heavy cream
  • 1 cup diced tomatoes
  • 1 small onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp olive oil
  • 1 tsp Cajun seasoning
  • Salt and pepper to taste
  • Fresh parsley, chopped for garnish
  • Grated Parmesan cheese for serving

Instructions

  1. Boil salted water and cook the pasta according to package instructions. Drain and set aside.
  2. In a skillet, heat olive oil and cook sausage until browned, then add shrimp until pink.
  3. Add onion and garlic, sauté until the onion is translucent.
  4. Pour in heavy cream, add tomatoes and Cajun seasoning, simmer for 5 minutes.
  5. Add cooked pasta, toss to coat with sauce, and heat for 2-3 minutes.

Notes

  • Adjust Cajun seasoning to taste for more or less spice.
  • Fresh parsley and Parmesan cheese enhance flavor and presentation.
