- 8 oz. fettuccine or linguine pasta
- 1 lb. shrimp, peeled and deveined
- 1 cup andouille sausage, sliced
- 2 cups heavy cream
- 1 cup diced tomatoes
- 1 small onion, chopped
- 3 cloves garlic, minced
- 2 tbsp olive oil
- 1 tsp Cajun seasoning
- Salt and pepper to taste
- Fresh parsley, chopped for garnish
- Grated Parmesan cheese for serving
Instructions
- Boil salted water and cook the pasta according to package instructions. Drain and set aside.
- In a skillet, heat olive oil and cook sausage until browned, then add shrimp until pink.
- Add onion and garlic, sauté until the onion is translucent.
- Pour in heavy cream, add tomatoes and Cajun seasoning, simmer for 5 minutes.
- Add cooked pasta, toss to coat with sauce, and heat for 2-3 minutes.
Notes
- Adjust Cajun seasoning to taste for more or less spice.
- Fresh parsley and Parmesan cheese enhance flavor and presentation.
