- 2 cups fresh spinach, chopped

Instructions
- Prepare the Salmon:
- Pat the salmon fillets dry with paper towels.
- Season both sides of the fillets with salt, pepper, and garlic powder.
- Cook the Salmon:
- In a large skillet, heat the olive oil over medium-high heat.
- Add the salmon fillets, skin-side down if they have skin, and cook for 4-5 minutes on each side, or until the salmon is golden brown and cooked through. Remove the salmon from the skillet and set aside.
- Make the Florentine Sauce:
- In the same skillet, reduce the heat to medium and add the butter.
- Once melted, add the minced garlic and cook for 1-2 minutes until fragrant.
- Add the chopped spinach and cook for 2-3 minutes until wilted.
- Stir in the heavy cream, Parmesan cheese, Italian seasoning, and red pepper flakes (if using). Simmer the sauce for 3-4 minutes, stirring occasionally, until it thickens slightly.
- Season the sauce with salt and pepper to taste.
- Combine and Serve:
- Return the cooked salmon fillets to the skillet, spooning the creamy Florentine sauce over the top. Let the salmon warm through for 1-2 minutes.
- Garnish with fresh parsley and serve immediately.
