Ingredients

  • 45 pounds of pork shoulder
  • 2 tablespoons of olive oil
  • 2 tablespoons of brown sugar
  • 1 tablespoon of paprika
  • 1 tablespoon of garlic powder
  • 1 tablespoon of onion powder
  • 1 tablespoon of salt
  • 1 tablespoon of black pepper
  • 1 teaspoon of cayenne pepper (optional for heat)
  • 1 cup of chicken broth

Instructions

  1. Preheat oven to 300°F (150°C) and pat the pork shoulder dry.
  2. Mix brown sugar, paprika, garlic powder, onion powder, salt, black pepper, and cayenne in a bowl. Rub the spice mix all over the pork.
  3. Optional: Sear the pork in olive oil in a skillet until browned on all sides.
  4. Place the pork in a roasting pan, add chicken broth, cover with foil, and roast for 4-6 hours until it reaches 195°F (90°C).
  5. Let the pork rest for 30 minutes, then shred with two forks.
  6. Serve pulled pork on buns, tacos, or salads.
