Ingredients

  • 1 cup of orzo pasta
  • 1 bell pepper, diced (red, yellow, or green)
  • 1 cup of cherry tomatoes, halved
  • 1/2 cup of cucumber, diced
  • 1/4 cup of red onion, finely chopped
  • 1/2 cup of feta cheese, crumbled
  • 1/4 cup of fresh parsley, chopped
  • 1/4 cup of olive oil
  • 2 tablespoons of red wine vinegar
  • Salt and pepper to taste

Instructions

  1. Boil salted water, add orzo, and cook for 8-10 minutes. Drain and rinse with cold water.
  2. Chop the bell pepper, cucumber, red onion, and halve the cherry tomatoes.
  3. Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
  4. In a large bowl, combine cooked orzo, vegetables, feta, and parsley. Pour dressing over and mix gently.
  5. Chill in the fridge for 30 minutes if possible, then serve.
