Ingredients

- 1 cup of orzo pasta
- 1 bell pepper, diced (red, yellow, or green)
- 1 cup of cherry tomatoes, halved
- 1/2 cup of cucumber, diced
- 1/4 cup of red onion, finely chopped
- 1/2 cup of feta cheese, crumbled
- 1/4 cup of fresh parsley, chopped
- 1/4 cup of olive oil
- 2 tablespoons of red wine vinegar
- Salt and pepper to taste
Instructions
- Boil salted water, add orzo, and cook for 8-10 minutes. Drain and rinse with cold water.
- Chop the bell pepper, cucumber, red onion, and halve the cherry tomatoes.
- Whisk together olive oil, red wine vinegar, salt, and pepper in a small bowl.
- In a large bowl, combine cooked orzo, vegetables, feta, and parsley. Pour dressing over and mix gently.
- Chill in the fridge for 30 minutes if possible, then serve.

- Letting the salad chill enhances the flavors.
