A comforting and flavorful One Pot Smoked Sausage Pasta that’s easy to make and perfect for any weeknight dinner.

Ingredients

  • 12 ounces of smoked sausage, sliced
  • 8 ounces of pasta (penne or rotini works well)
  • 1 onion, diced
  • 2 cloves of garlic, minced
  • 1 bell pepper, diced
  • 1 can (14.5 ounces) of diced tomatoes
  • 4 cups of chicken broth
  • 1 teaspoon of Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese for garnish

Instructions

  1. Sauté the sliced sausage in a pot over medium heat until browned.
  2. Add diced onion, bell pepper, and minced garlic; sauté until softened.
  3. Stir in pasta, diced tomatoes, chicken broth, and Italian seasoning; season with salt and pepper, and bring to a boil.
  4. Reduce heat to low, cover, and simmer for 10-12 minutes, stirring occasionally.
  5. Serve hot, garnished with Parmesan cheese.
