Ingredients

  • 1 lb shrimp, peeled and deveined
  • 3 tablespoons olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • 1 cup vegetable or chicken broth
  • 1 cup spinach (fresh)
  • ½ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a pot and sauté minced garlic for 1 minute.
  2. Add shrimp and cook for 3-4 minutes until pink.
  3. Pour in heavy cream and broth, stirring to combine, then bring to a simmer.
  4. Add tortellini and cook according to package instructions (5-7 minutes).
  5. Stir in spinach and Parmesan, allowing spinach to wilt and cheese to melt. Season with salt and pepper.
  6. Serve hot, garnished with fresh parsley.
