- 12 oz tortellini (fresh or frozen)
- 1 lb shrimp, peeled and deveined
- 3 tablespoons olive oil
- 4 cloves garlic, minced
- 1 cup heavy cream
- 1 cup vegetable or chicken broth
- 1 cup spinach (fresh)
- ½ cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh parsley for garnish
Instructions
- Heat olive oil in a pot and sauté minced garlic for 1 minute.
- Add shrimp and cook for 3-4 minutes until pink.
- Pour in heavy cream and broth, stirring to combine, then bring to a simmer.
- Add tortellini and cook according to package instructions (5-7 minutes).
- Stir in spinach and Parmesan, allowing spinach to wilt and cheese to melt. Season with salt and pepper.
- Serve hot, garnished with fresh parsley.
Notes
- Feel free to substitute chicken for shrimp if desired.
- This dish can be made with frozen tortellini; adjust cooking time as needed.
