To prepare this mouthwatering One Pot Jambalaya, gather the following ingredients:
- 1 tablespoon olive oil
- 1 pound andouille sausage, sliced
- 1 pound chicken breast, diced
- 1 onion, chopped
- 1 bell pepper, diced (any color)
- 2 celery stalks, diced
- 3 cloves garlic, minced
- 1 can (14.5 ounces) diced tomatoes
- 1 cup long-grain rice
- 3 cups chicken broth
- 2 teaspoons Cajun seasoning
- 1 teaspoon thyme
- 1 bay leaf
- 1 cup frozen peas
- Salt and pepper to taste
- Chopped green onions for garnish
Instructions
- Heat olive oil in a large pot. Sauté sausage and chicken until browned; set aside.
- In the same pot, cook onion, bell pepper, and celery until softened. Add garlic and cook until fragrant.
- Return meats to the pot. Add tomatoes, rice, broth, Cajun seasoning, thyme, and bay leaf. Stir to combine.
- Bring to a boil, then reduce heat and simmer covered for 20 minutes until rice is tender.
- Stir in peas during the last few minutes. Season with salt and pepper, and remove bay leaf.
- Garnish with green onions and serve hot.
Notes
- For extra spice, add more Cajun seasoning or hot sauce.
