To prepare this mouthwatering One Pot Jambalaya, gather the following ingredients:

  • 1 tablespoon olive oil
  • 1 pound andouille sausage, sliced
  • 1 pound chicken breast, diced
  • 1 onion, chopped
  • 1 bell pepper, diced (any color)
  • 2 celery stalks, diced
  • 3 cloves garlic, minced
  • 1 can (14.5 ounces) diced tomatoes
  • 1 cup long-grain rice
  • 3 cups chicken broth
  • 2 teaspoons Cajun seasoning
  • 1 teaspoon thyme
  • 1 bay leaf
  • 1 cup frozen peas
  • Salt and pepper to taste
  • Chopped green onions for garnish

Instructions

  1. Heat olive oil in a large pot. Sauté sausage and chicken until browned; set aside.
  2. In the same pot, cook onion, bell pepper, and celery until softened. Add garlic and cook until fragrant.
  3. Return meats to the pot. Add tomatoes, rice, broth, Cajun seasoning, thyme, and bay leaf. Stir to combine.
  4. Bring to a boil, then reduce heat and simmer covered for 20 minutes until rice is tender.
  5. Stir in peas during the last few minutes. Season with salt and pepper, and remove bay leaf.
  6. Garnish with green onions and serve hot.

Notes

  • For extra spice, add more Cajun seasoning or hot sauce.
