  • 1 pound chicken breast, diced
  • 1 cup orzo pasta
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 cup spinach, chopped
  • 1 medium onion, diced
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • Salt and pepper to taste
  • Parmesan cheese, for serving

Instructions

  1. Sauté diced chicken in olive oil, season with salt and pepper, until browned. Remove and set aside.
  2. In the same skillet, sauté diced onion until translucent, then add minced garlic and cook for another minute.
  3. Add orzo to the skillet, stir to coat, then pour in chicken broth and bring to a boil. Reduce heat and simmer until orzo is tender.
  4. Stir in heavy cream and Italian seasoning, return chicken to skillet, add spinach, and combine.
  5. Serve warm topped with Parmesan cheese.
