Instructions
- Gather and prepare all ingredients, dicing the chicken and measuring rice, broth, and vegetables.
- In a large skillet, heat olive oil and sauté chicken until browned and cooked through.
- Add rice, garlic powder, onion powder, paprika, salt, and pepper; stir and cook for 2-3 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer covered for 15 minutes.
- Fold in the frozen mixed vegetables and cook covered for another 5 minutes.
- Sprinkle shredded cheddar cheese on top and cook until melted and bubbly.
- Serve warm, garnished with fresh herbs if desired.
