Description

A flavorful and hearty chicken and rice dish with a sweet BBQ honey sauce.


Ingredients

Scale
  • 4 boneless, skinless chicken thighs or breasts
  • 1 cup long-grain rice
  • 2 cups chicken broth
  • 1/2 cup honey
  • 1/4 cup BBQ sauce (your favorite brand)
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Season chicken with salt, pepper, garlic powder, onion powder, and smoked paprika.
  2. Sear chicken in olive oil over medium-high heat for 5-6 minutes on each side.
  3. Remove chicken and add rice to the pan, stirring for 1 minute.
  4. Mix honey and BBQ sauce, then add to rice along with chicken broth.
  5. Return chicken to the pan, bring to a boil, then simmer covered for 20 minutes.
  6. Fluff the rice and serve hot, garnished with parsley if desired.
