Ingredients

- 1 pound of chicken thighs (boneless and skinless)
- 1 cup of uncooked rice (jasmine or basmati works great)
- 2 cups of chicken broth
- 1/2 cup of honey
- 1/4 cup of BBQ sauce (your favorite brand)
- 1 tablespoon of olive oil
- 1 teaspoon of garlic powder
- 1 teaspoon of onion powder
- Salt and pepper, to taste
- Chopped green onions for garnish (optional)
Instructions
- Season chicken thighs with garlic powder, onion powder, salt, and pepper.
- In a skillet, heat olive oil and sear the chicken for 5 minutes on each side until golden brown.
- Mix honey and BBQ sauce in a bowl.
- Remove chicken, add rice and chicken broth to the skillet, and stir to combine.
- Return chicken to the pan, top with honey BBQ mixture, simmer covered on low for 20 minutes.
- Fluff rice, garnish with green onions, and serve.
Notes
- For extra flavor, marinate the chicken in the honey BBQ mixture for a few hours before cooking.
- This dish can be served with a side of steamed vegetables for a complete meal.
