Ingredients

  • 1 pound of chicken thighs (boneless and skinless)
  • 1 cup of uncooked rice (jasmine or basmati works great)
  • 2 cups of chicken broth
  • 1/2 cup of honey
  • 1/4 cup of BBQ sauce (your favorite brand)
  • 1 tablespoon of olive oil
  • 1 teaspoon of garlic powder
  • 1 teaspoon of onion powder
  • Salt and pepper, to taste
  • Chopped green onions for garnish (optional)

Instructions

  1. Season chicken thighs with garlic powder, onion powder, salt, and pepper.
  2. In a skillet, heat olive oil and sear the chicken for 5 minutes on each side until golden brown.
  3. Mix honey and BBQ sauce in a bowl.
  4. Remove chicken, add rice and chicken broth to the skillet, and stir to combine.
  5. Return chicken to the pan, top with honey BBQ mixture, simmer covered on low for 20 minutes.
  6. Fluff rice, garnish with green onions, and serve.

Notes

  • For extra flavor, marinate the chicken in the honey BBQ mixture for a few hours before cooking.
  • This dish can be served with a side of steamed vegetables for a complete meal.
