- 4 chicken breasts, boneless and skinless
- 1 cup of cherry tomatoes
- 2 cups of mixed veggies (zucchini, bell peppers, and carrots work great)
- 1/4 cup balsamic vinegar
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- Salt and pepper to taste
- Fresh basil for garnish
Instructions
- Preheat the oven to 400°F (200°C).
- In a large bowl, combine chicken breasts, olive oil, balsamic vinegar, garlic, salt, and pepper.
- Add cherry tomatoes and mixed veggies, tossing to coat.
- Transfer chicken and veggies to a baking sheet, spreading them evenly.
- Roast for 25-30 minutes until chicken reaches 165°F (75°C) and veggies are tender.
- Garnish with fresh basil and serve.
