Ingredients

  • 4 chicken breasts, boneless and skinless
  • 1 cup of cherry tomatoes
  • 2 cups of mixed veggies (zucchini, bell peppers, and carrots work great)
  • 1/4 cup balsamic vinegar
  • 2 tablespoons olive oil
  • 2 cloves garlic, minced
  • Salt and pepper to taste
  • Fresh basil for garnish

Instructions

  1. Preheat the oven to 400°F (200°C).
  2. In a large bowl, combine chicken breasts, olive oil, balsamic vinegar, garlic, salt, and pepper.
  3. Add cherry tomatoes and mixed veggies, tossing to coat.
  4. Transfer chicken and veggies to a baking sheet, spreading them evenly.
  5. Roast for 25-30 minutes until chicken reaches 165°F (75°C) and veggies are tender.
  6. Garnish with fresh basil and serve.
