- 4 medium zucchinis, sliced
- 2 cups shredded mozzarella cheese
- 1 cup grated Parmesan cheese
- 2 cloves garlic, minced
- 1 teaspoon dried oregano
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 2 tablespoons olive oil
- Fresh basil leaves for garnish (optional)
Instructions
- Preheat your oven to 375°F (190°C).
- Wash and slice the zucchinis into thin rounds; optionally sprinkle with salt and let sit for 10 minutes.
- In a large bowl, combine the sliced zucchini, minced garlic, dried oregano, salt, black pepper, and olive oil; toss to coat.
- Layer half of the mozzarella cheese at the bottom of a greased baking dish, add the zucchini mixture, then top with remaining mozzarella and Parmesan cheese.
- Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden.
Notes
- Letting the zucchini sit with salt helps to draw out excess moisture.
- Fresh basil can be used as a garnish for added flavor.
