Ingredients

  • 4 medium zucchinis, sliced
  • 2 cups shredded mozzarella cheese
  • 1 cup grated Parmesan cheese
  • 2 cloves garlic, minced
  • 1 teaspoon dried oregano
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 tablespoons olive oil
  • Fresh basil leaves for garnish (optional)

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Wash and slice the zucchinis into thin rounds; optionally sprinkle with salt and let sit for 10 minutes.
  3. In a large bowl, combine the sliced zucchini, minced garlic, dried oregano, salt, black pepper, and olive oil; toss to coat.
  4. Layer half of the mozzarella cheese at the bottom of a greased baking dish, add the zucchini mixture, then top with remaining mozzarella and Parmesan cheese.
  5. Cover with aluminum foil and bake for 20 minutes, then remove foil and bake for an additional 10 minutes until bubbly and golden.

Notes

  • Letting the zucchini sit with salt helps to draw out excess moisture.
  • Fresh basil can be used as a garnish for added flavor.
