Instructions
- Heat olive oil in a large pot over medium heat.
- Add chopped onions, carrots, and celery; sauté for 5 minutes.
- Stir in minced garlic; cook for 1 minute.
- Pour in chicken broth; bring to a boil.
- Add chicken pieces; simmer until cooked through.
- Shred cooked chicken and return to pot.
- Add noodles; cook until tender.
- Season with salt, pepper, and herbs; serve warm.
- For spicy tomato soup, heat olive oil, sauté onions, add tomatoes and broth, season, simmer, blend, and stir in basil before serving.
