  • 4 boneless, skinless chicken breasts
  • 2 cups of fresh mushrooms, chopped
  • 1 cup of spinach, chopped
  • 1 cup of cream cheese, softened
  • 1/2 cup of grated Parmesan cheese
  • 2 cloves of garlic, minced
  • 1 tablespoon of olive oil
  • Salt and pepper to taste
  • 1 teaspoon of dried thyme

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. Sauté chopped mushrooms and garlic in olive oil until tender, then add spinach until wilted.
  3. Combine sautéed vegetables with cream cheese, Parmesan, thyme, salt, and pepper in a bowl.
  4. Create pockets in the chicken breasts and fill with the mushroom mixture.
  5. Bake in the oven for 25-30 minutes until cooked through (internal temperature 165°F / 75°C).
