- 4 boneless, skinless chicken breasts
- 2 cups of fresh mushrooms, chopped
- 1 cup of spinach, chopped
- 1 cup of cream cheese, softened
- 1/2 cup of grated Parmesan cheese
- 2 cloves of garlic, minced
- 1 tablespoon of olive oil
- Salt and pepper to taste
- 1 teaspoon of dried thyme
Instructions
- Preheat your oven to 375°F (190°C).
- Sauté chopped mushrooms and garlic in olive oil until tender, then add spinach until wilted.
- Combine sautéed vegetables with cream cheese, Parmesan, thyme, salt, and pepper in a bowl.
- Create pockets in the chicken breasts and fill with the mushroom mixture.
- Bake in the oven for 25-30 minutes until cooked through (internal temperature 165°F / 75°C).

- Ensure chicken is not overcooked to keep it juicy.
- Feel free to add other vegetables to the stuffing as desired.
