Ingredients

  • 1 ½ cups warm water (110°F to 115°F)
  • 2 tablespoons sugar
  • 1 packet active dry yeast (about 2 ¼ teaspoons)
  • 4 cups all-purpose flour
  • 1 teaspoon salt
  • 8 ounces mozzarella cheese (cut into sticks)
  • ½ cup baking soda
  • 1 large egg (beaten, for egg wash)
  • Coarse sea salt, for sprinkling

Instructions

  1. Activate the yeast by combining warm water and sugar, then sprinkle yeast on top and let sit for 5-10 minutes until frothy.
  2. In a large bowl, mix flour and salt, then add the yeast mixture and stir until a dough forms.
  3. Knead the dough on a floured surface for 8-10 minutes until smooth and elastic.
  4. Let the dough rise in a greased bowl covered with a damp cloth for about 1 hour, until doubled in size.
  5. Divide the dough into 8 pieces, roll into ropes, place a mozzarella stick in the center, fold and twist into pretzel shapes.
  6. Boil 10 cups of water with baking soda and carefully add pretzels for 30 seconds each.
  7. Preheat oven to 425°F, place boiled pretzels on a lined baking sheet, brush with egg wash, and sprinkle with sea salt. Bake for 15-20 minutes until golden brown.
  8. Let the pretzels cool for a few minutes before enjoying!
