Ingredients

  • 1 lb of breakfast sausage (or turkey sausage for a leaner option)
  • 6 large eggs
  • 2 cups of frozen hash browns
  • 1 cup of shredded cheese (cheddar or your choice)
  • 1 cup of milk
  • 1 diced bell pepper (any color)
  • 1 cup of diced onions
  • Salt and pepper to taste
  • Optional: hot sauce for added kick

Instructions

  1. Cook the sausage in a skillet over medium heat until browned, about 5-7 minutes.
  2. Transfer the cooked sausage to the crock pot, add hash browns, bell pepper, and onions, and stir well.
  3. Whisk together eggs, milk, salt, and pepper, then pour over the mixture in the crock pot and stir gently.
  4. Sprinkle shredded cheese on top.
  5. Cover and cook on low for 8 hours or high for 4 hours.
