Ingredients

  • 1/2 cup of unsweetened cocoa powder
  • 1 cup of granulated sugar
  • 1/2 teaspoon of baking powder
  • 1/4 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 1/2 cup of unsalted butter, melted
  • 2 large eggs
  • 1 teaspoon of vanilla extract
  • 1/2 cup of fresh raspberries
  • 1/2 cup of chocolate chips (semi-sweet or dark)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Line a muffin tin with cupcake liners.
  3. In a bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
  4. In another bowl, mix melted butter, eggs, and vanilla extract.
  5. Combine wet ingredients with dry ingredients, stirring until just mixed.
  6. Fold in raspberries and chocolate chips.
  7. Spoon batter into liners, filling them two-thirds full.
  8. Bake for 12-15 minutes until the tops are set but centers are gooey.
  9. Cool in the pan for 5 minutes, then transfer to a wire rack.

Notes

  • For best results, do not overmix the batter.
  • These cupcakes are best served warm for a molten center.
