Ingredients

  • 1 cup crushed graham crackers
  • 1/4 cup melted butter
  • 1/2 cup brown sugar
  • 16 ounces cream cheese, softened
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 large eggs
  • 1 cup chopped pecans
  • 1/2 cup corn syrup
  • 1/4 teaspoon salt

Instructions

  1. Preheat the oven to 325°F (160°C) and mix crushed graham crackers with melted butter.
  2. Press the mixture into the bottom of muffin tins lined with cupcake liners.
  3. In a bowl, beat cream cheese, then add sugars and vanilla, mixing well; add eggs one at a time, then fold in pecans and corn syrup.
  4. Pour filling over the crusts, bake for 25 minutes until slightly jiggly, then cool in the pan for 10 minutes before transferring to a wire rack to cool completely.
