For our Mexican Street Corn Pasta Salad, you will need the following ingredients:

  • 8 oz elbow macaroni or any pasta of your choice
  • 2 cups fresh corn (or canned if you’re in a hurry)
  • 1/2 cup mayonnaise
  • 1/2 cup sour cream
  • 1 cup crumbled feta cheese
  • 1/4 cup chopped fresh cilantro
  • 1/4 cup lime juice (freshly squeezed is best)
  • 1 teaspoon chili powder
  • Salt and pepper to taste
  • Sliced jalapeños for garnish (optional)

Instructions

  1. Bring a large pot of salted water to a boil, cook the pasta until al dente, then drain and rinse.
  2. If using fresh corn, steam or grill until tender; if canned, drain and rinse.
  3. In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
  4. Add the cooked pasta, corn, cilantro, and feta cheese to the dressing and toss gently.
  5. Cover and chill in the refrigerator for at least 30 minutes, then serve with jalapeños if desired.

Notes

  • For best flavor, use freshly squeezed lime juice.
  • Can be made ahead of time and stored in the refrigerator.
