For our Mexican Street Corn Pasta Salad, you will need the following ingredients:
- 8 oz elbow macaroni or any pasta of your choice
- 2 cups fresh corn (or canned if you’re in a hurry)
- 1/2 cup mayonnaise
- 1/2 cup sour cream
- 1 cup crumbled feta cheese
- 1/4 cup chopped fresh cilantro
- 1/4 cup lime juice (freshly squeezed is best)
- 1 teaspoon chili powder
- Salt and pepper to taste
- Sliced jalapeños for garnish (optional)
Instructions
- Bring a large pot of salted water to a boil, cook the pasta until al dente, then drain and rinse.
- If using fresh corn, steam or grill until tender; if canned, drain and rinse.
- In a bowl, whisk together mayonnaise, sour cream, lime juice, chili powder, salt, and pepper.
- Add the cooked pasta, corn, cilantro, and feta cheese to the dressing and toss gently.
- Cover and chill in the refrigerator for at least 30 minutes, then serve with jalapeños if desired.
Notes
- For best flavor, use freshly squeezed lime juice.
- Can be made ahead of time and stored in the refrigerator.
