Gather these simple ingredients to whip up your Mediterranean Spinach and Feta Crisps:
- 2 cups fresh spinach, chopped
- 1 cup feta cheese, crumbled
- 1/2 cup grated Parmesan cheese
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Olive oil for frying
Instructions
- Wash and finely chop the spinach.
- In a bowl, mix spinach, feta, Parmesan, flour, eggs, garlic powder, onion powder, salt, and pepper until combined.
- Heat olive oil in a skillet over medium heat.
- Scoop and drop the mixture into the hot oil, frying in batches for 2-3 minutes on each side until golden brown.
- Drain on paper towels and serve warm.
