  • 1 cup uncooked orzo pasta
  • Juice of 2 lemons
  • Zest of 1 lemon
  • Salt and pepper to taste
  • Fresh parsley for garnish

Instructions

  1. Heat olive oil in a large pot over medium heat, then sauté onion, carrots, and celery for 5-7 minutes.
  2. Add minced garlic and chicken breasts, seasoning with salt and pepper; brown chicken for about 5 minutes.
  3. Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
  4. Remove chicken, shred it, and return to the pot; stir in uncooked orzo and cook for another 10 minutes.
  5. Stir in lemon juice and zest, adjust seasoning, and garnish with fresh parsley before serving.
