Instructions
- Heat olive oil in a large pot over medium heat, then sauté onion, carrots, and celery for 5-7 minutes.
- Add minced garlic and chicken breasts, seasoning with salt and pepper; brown chicken for about 5 minutes.
- Pour in chicken broth, bring to a boil, then reduce heat and simmer for 15 minutes.
- Remove chicken, shred it, and return to the pot; stir in uncooked orzo and cook for another 10 minutes.
- Stir in lemon juice and zest, adjust seasoning, and garnish with fresh parsley before serving.

- For added flavor, you can use homemade chicken broth.
